Kanchipuram Batter


Sometimes I like my idlis packed with a little extra. Crunchiness. Flavour. Zest. And my Kanchipuram idli batter is just the thing. This batter has yogurt, cashew nuts, lentils, ginger, cumin, peppercorn and mild spices for all those mornings when regular idlis just won’t cut it. These idlis are best accompanied by coconut or tomato chutney (no sambhar allowed).

I make a fresh batch of this batter every day without any preservatives. You’ll need to refrigerate at all times and use it within three days. You can also store it in the freezer for up to three months. Make the tastiest idlis any side of the Vindhyas and let everyone discover your Kitchen Ninja chops.

Urad dal (Split black gram)
A source of protein, urad dal also comes loaded with fats and carbohydrates. Full of Vitamin B, it is also good for women’s health as it has folic acid, iron and calcium.

Fenugreek seeds
Great for the hair and heart, fenugreek seeds are a good source of protein, magnesium, copper and manganese, dietary fibre and iron.

Chana dal (Bengal gram)
Chana dal has many vital nutrients, minerals and vitamins needed by the human body.

This stalwart of Indian kitchens protects the gastrointestinal system, balances cholesterol levels, reduces joint inflammation and strengthens your immune system.

Packed with calcium, protein, and active ‘good’ bacteria which helps keep the gut healthy, yogurt is a superfood that promotes healthy weight loss.

Cashews are nutritious powerhouses of proteins and essential minerals. They are also a source of oleic acid.

A digestive aid and immunity booster high in antioxidants, chromium, magnesium and zinc, which improve blood flow and promote the body’s absorption of essential nutrients.

Curry leaves
A natural flavouring agent that makes food smell delicious, curry leaves contain calcium, phosphorous, iron, magnesium, copper, vitamins B3, C, A, B and E, antioxidants, plant sterols, amino acids, glycosides, and flavonoids.

Black pepper
Known as the King of Spices, black pepper contains potassium, calcium, magnesium, phosphorus, sodium, as well as vitamins such as thiamin, riboflavin, niacin, and vitamin B6.

Cumin promotes healthy sleep patterns, aids digestion, improves immunity and helps treat skin and respiratory disorders.

Packed with fibre, magnesium, manganese, protein and iron, Coriander has eleven components of essential oils and six types of acids, including ascorbic acid or vitamin C.

Hing, the quintessential flavouring agent in Indian kitchens protects the gastrointestinal system, reduces inflammation and boosts immunity.

One of the four essentials of good cooking, salt has many essential nutrients and minerals that are valuable for healthy functioning of the body.


Bring the batter to room temperature and stir it well before making your idlis. It’s mildly salted so give it a taste before you add more. If the batter is too thick, I thin it down with a little water for dosas. Dosas made with this batter are spongy and soft. For fluffy idlis steam on high flame for 5 minutes. Let them cool down a bit and scoop them out gently with a spoon. You can also make dhoklas with this batter.
